DoubleTree by Hilton has unveiled piebird, a brand-new restaurant and bar concept set to roll out across its U.S. properties later this year. Developed by Hilton’s StiR Creative Collective, piebird is inspired from classic Americana, offering a modern take on traditional American dishes with a special focus on signature pies.
Bringing Comfort and Tradition to Hotel Dining
The first piebird location is expected to open in fall 2025 at DoubleTree by Hilton Hotel Nanuet, New York, with a second location launching in early 2026 at DoubleTree by Hilton Hotel Asheville – Biltmore, North Carolina. More locations will follow across the country.

A Menu Rooted in American Heritage
Designed to celebrate the rich traditions of American cooking, piebird offers a diverse menu featuring classic and regionally inspired dishes, including:
- Breakfast favourites such as Monkey Bread French Toast and piebird Quiche.
- Lunch and dinner staples like Knife and Fork Caesar, Tomato Jam Grilled Cheese, and the signature Chicken Pot Pie.
- Regional specialities reflecting Southern Comfort and Tex-Mex cuisine, including Biscuits and Gravy and Southwest Cobb Salad.
- Seasonally rotating pies with standout options like the piebird Pie, a chocolate custard topped with chocolate malt balls.
- Creative cocktails, including the piebird Palmer and reimagined classics like the Banana Daiquiri and Mandarin Mango Margarita.
A Thoughtfully Designed Space
Inspired by DoubleTree’s unique hospitality, piebird features warm, inviting interiors with natural textures, soft colour palettes, vintage-inspired artwork, and floral wallpaper, creating a homely atmosphere.
Expanding Hilton’s Culinary Innovation
Hilton’s StiR Creative Collective continues to reimagine hospitality dining, having previously launched standout concepts like Leonessa at Conrad New York Downtown and Ayda at Waldorf Astoria Cairo Heliopolis.
