Dining at The Wildbirch Hotel Leading the hotel’s culinary experience is Crimson, a signature restaurant by Executive Chef La Mont Caldwell. Inspired by Alaska’s stunning summer sunsets, Crimson blends classic Alaskan flavors with a touch of Pan-American Latin influence, serving breakfast, lunch, and dinner in a warm, inviting atmosphere. Guests can enjoy al fresco dining on the terrace or opt for in-room culinary delights.
Gary McCutcheon, Director of Food and Beverage, shared his enthusiasm, stating, “Crimson will undoubtedly leave its mark on Anchorage’s thriving dining scene. Chef La Mont has crafted a menu that surprises and delights, blending traditional Alaska dishes with innovative twists.”
For coffee lovers, Canteen Coffee Co., located in the hotel lobby, offers artisanal provisions alongside a selection of espresso, fresh juices, and grab-and-go options. Guests can order through the lobby or its streetside walk-up window.
A Taste of Local Brewing Set to debut in fall 2025, The Undertap will be a laidback tasting room crafted in partnership with Midnight Sun Brewing Co., allowing guests to explore a variety of locally brewed craft beers. The space will also serve as a relaxed venue for private events and gatherings.
A Vision for Anchorage’s Future Co-owner Mark Begich, former Mayor of Anchorage and U.S. Senator, expressed his excitement for the project: “Introducing The Wildbirch Hotel to Anchorage is an incredible milestone. We’re bringing a modern Alaska experience unlike anything else, further revitalising downtown.”

Begich, alongside Sheldon Fisher, Alaska’s former State Revenue Commissioner, founded MASH, LLC with a mission to revive downtown Anchorage through strategic hospitality projects. In partnership with Springboard Hospitality, they aim to make The Wildbirch Hotel a cornerstone of innovation and excellence in Alaska’s hotel scene.
With its distinctive character, locally inspired experiences, and modern comforts, The Wildbirch Hotel is poised to become a must-visit destination for both residents and visitors, redefining what it means to stay in Anchorage.
